I used to eat at Addis Kitchen in Louisville, KY 5 days a week. I would get their Chicken Curry.
After being reminded of the flavors during our recent trip to Disney and eating at Sanaa I’ve been researching how to make food like this at home.
This appears to be very close to my memory of the dish

I swapped the cooking vessel for a pressure cooker and sautéed the onions there and then cooked everything at 25 min on high pressure instead of the 1 hour cook time.
